5 Minute Gut Healthy Breakfast

5 minutes before you go to bed is all you need for the perfect gut-friendly breakfast that is ready to grab and go in the morning

These peaches and cream overnight oats pack in 10g of fibre, which is a third of your daily fibre need!

But why is this recipe so good for your gut?

Firstly, the chia seeds act as a prebiotic fibre which helps your gut to produce those GOOD bacteria. They also help strengthen your mucosal gut lining thanks to their gel-like texture.

The oats also contain a source of soluble fibre called beta-glucans, which your gut absolutely loves.

And to give it even more of a gut-loving boost, I added in kefir yoghurt which contains live probiotics.

It’s just so creamy and delicious and one of my staple, go-to breakfasts as a nutritionist.

Ingredients (to make 2-3 servings):

2 ripe peaches, divided (fresh or canned)
2 cups creamy non-dairy milk (I used coconut)
1 tablespoon maple syrup
1 teaspoon @myvegan vanilla Flavdrops
1/4 teaspoon cinnamon
pinch of salt
2 cups (190 g) rolled oats
2 tablespoons @myvegan chia seeds
1/4 cup (70 g) Kefir yoghurt
