High Protein Yoghurt Granola Cups

One serving of these granola cups contains about 40g protein so are ideal for those mid-afternoon crunchy, creamy snack cravings! 😍

This recipe makes about 12 cups (three cups = one serving).

For the granola cups:
- 2 mashed bananas
- 1 cup oats
- 1/4 cup peanut butter
- 2 scoops @myvegan Coffee & Walnut Protein blend
- 1 teaspoon cinnamon

For the filling:
- 3 cups dairy free Greek style or coconut yoghurt
- Fruit/berries of choice for topping

1. Mash the bananas. Add the oats, peanut butter and cinnamon and stir until combined
2. Press the mixture into a greased muffin pan to form cups
3. Cook at 180C/ 350F for 12-15 minutes
4. Let the granola cups cool down completely
5. Fill the cups with the yoghurt, fruit & berries of choice. Store the cups in an airtight container and fill the cups just before eating.
